The "Big Five"
is a term given to the five most sought-after wild animals in Africa,
based on their rarity, beauty, and the difficulty of finding them
in the wild. These limited edition wines, representing each of the
five famous animals, conjure up the magnificence of these noble creatures
and the beautiful lands they inhabit.
The Big 5 Collection
is produced at the Climor Winery located in Worcester. Climor procures
the best grapes available from 700 ha of neighboring farms in the Robertson
Swellenham & Worcester districts of the Breede River Valley, as
well as, from it's own vineyards in Paarl and Durbanville.
Night harvesting
and gentle handling at the cellar are key factors that our winemakers
oversee with farmers in order to maintain consistent style & quality.
Before fermentation all juices are improved by skin contact at very
low temperatures, and then placed in stainless steel tanks until finished.
The main focus is to maintain full varietal character and well balanced
wines.
Robertson is
characteristic of sandy, alluvial and organic fertile soils where
vines grow prolifically and are influenced by the south-easterly breezes
that cool down the late afternoons during summer. Wine farmers in
their quest for lower yields, hence better quality, have progressively
moved onto higher altitudes finding more clay and limestone contents
as well as a cooler climate, resulting in a revolution in quality
with emerging stars such as Sauvignon Blanc and Shiraz. Worecester's
vineyards are traditionally sitting in feritle alluvial soils, but
as in it's nieghbor Robertson there been a migration up to the hills.
Taking advantage of it's several areas, back in 1995 viticultural
consultants started pinpointing such for specific varietals finding
best suitable regions for each grape.
