Shiraz
Vinification: Fermented in a dozen different
batches and then each submitted to slightly different maturation
conditions. The components have been manipulated to elicit
complexity in the blend.
Grape Variety: 100% Shiraz
Color: Medium-deep red
Nose: Enticing plum and blackberry aromas
with hints of cinnamon and dark chocolate
Palate: Medium bodied with fine tannins,
allowing an extended focus of rich plum and blackberry flavors
along the palate.
Food Matches: Red meat dishes, mild Asian
beef stir-fry. Pizza and pasta are also favorites. |
Shiraz Cabernet
Vinification: Shiraz and Cabernet Sauvignon
was harvested over an extended period giving fruit with
a variety of maturities and flavors. Both varieties were
generally ripe with typical varietal characteristics of
plum berry and licorice and ripe tannins.
Grape Variety: 60% Shiraz and 40% Cabernet
Sauvignon
Color: Crimson red with pink/purple hues
Nose: Sweet plum and berry fruit with
licorice aromas and with subtle vanilla and toasty oak influences
Palate: The palate shows abundant flavors
from both Shiraz and Cabernet Sauvignon. Spicy Shiraz fruit
combined with typical berry flavors from Cabernet Sauvignon.
Soft drying tannins complement the balance and provide a
lingering finish.
Food matches: Barbequed meats, spaghetti
bolognaise or pizza |
Chardonnay
Vinification: Grapes from a number of
vineyard plots were harvested to obtain fruit with a variety
of maturity levels and flavors. These ranged from melon
through to peach and fig. Individual batches of juice were
then fermented separately. After fermentation, the individual
wines were then blended to achieve an integration of the
different fruit , oak and fermentation flavors. The resulting
wine displays good varietal structure and generous flavors.
Grape Variety: 100% Chardonnay
Color: Medium straw yellow with a green
tinge
Palate: Ripe Chardonnay fruit flavors
fill the palate. Nutty oak nuances complement the fruit
balance, which follows through to a clean soft lingering
finish.
Food Matches: A great accompaniment to
seafood, chicken, white meats, pasta and salads |
Sauvignon
Blanc
Vinification: Fruit was harvested from
individual vineyards at different maturity levels and fermented
separately at cool temperatures in stainless steel to retain
varietal characteristics. After fermentation, some batches
were left on lees for varying amount of time to assist in
palate weight and length. Wines were finally blended, stabilized
and filtered ready for bottling.
Grape Variety: 100% Sauvignon Blanc Color:
Pale Straw
Nose: Fresh tropical and lemon/citrus
aromas with light floral and herbaceous notes
Palate: Zesty yet flavorsome palate of
melon and tropical fruit with some herbaceous characters
that linger on the finish
Food Matches: Sushi, stir-fries, shellfish
or as an aperitif.

Merlot
Vinification. Fruit is handled gently
to extract the softest tannins and then put through a slow
maturation to add oak complexities before blending.
Nose: Plum jam and coffee aromas with
nuances of cherry and chocolate
Tasting Notes: Mature flavours of berries
and leaves coffee and chocolate on a silky smooth palate.
Its finish is long and lightly minty, with soft dry tannins
