Tasting Notes
It has a brilliant ruby red colour and a bouquet which reminds of morello and cherry flowers with a pleasant bitter and balanced taste.
Wine Making
Harvest at the end of September, with double picking and selection to allow perfect ripening. Rotary crushing with stripping, the temperature of fermentation does not exceed 26°C. Short maceration with soft and frequent pumping over, followed by early separation of marc to preserve its flowery bouquet and suppleness. Slow final fermentation at least 20°C to promote the mololactic fermentation, then cleaning, decanting, stabilization and bottling.
Food Affinities
This wine goes well with white meat or red boiled meat and is ideal for complete, light meals. To be served at cellar temperature.
