Valpolicella Superiore Classico Ripasso

Tasting Notes
Color ruby to strong red, sometimes with orange nuances due to maturation. Bouquet very clean, of undergrowth, sour black cherries and plum jam, spicy slight pepper. Body robust, complex, it reminds you of its scents, well-balanced, slightly tannic.
Wine Making
Harvest from end of September, with at least double picking of selection to allow perfect ripening, and often picked when the grapes are overripe. The grapes are then crushed and stripped. Fermentation takes palce in small containers and is carried out until the sugar content is eliminated with frequent pumping over to achieve highest extraction without excessive pressing. THe malolactic fermentation and the "Ripasso" are the final operations before standing in barrels. The preperation ends with stabilization, bottling and the refining in bottles for at least six months.
Food Affinities
It is ideal with all white and red meat, raw ("carpaccio" and "carne sala") baked, roast, stewed or braised meat, and with hard cheese.
