Exigence is a very special wine, produced in limited quantities, and bottled only in the best of vintages. Yvon Mau strives to find grapes from the best vineyards throughout Bordeaux to make this luxury cuvée. Grapes are from old vines, with an average age of over 25 years. The sources of these old vines are on the "Right Bank," primarily in St. Emilion. This is a powerful wine, but retains the elegance and perfume of that region.

The vines are carefully pruned, picked and cared for by hand. Aging is completed on the lees in new French oak barrels  for 18 months.

Total Production: Very limited, depending on the vintage and quality of grapes available.

Nose: Rich and full, with dark fruit and smoke characters.
Palate: Elegance and richness abound in this special reserve blend. The berry and cassis flavors blend well with the smoky oak elements. The tannins are soft, and add texture to the entire experience. This is a very robust wine to match with richly flavored dishes.
