Vinification
The wine is made using gropes with " noble rot " which are picked
and sorted by hand. The must is racked in cold conditions l8*C. Alcoholic
fermentation at a controlled temperature (20*Q) until the right sugar/alcohol
balance is achieved. The fermentation is then stopped by sudden cooling followed
by filtration and sulphiting.
Tasting Notes
A pretty golden yellow colour. Aromas of very ripe fruit (apricots, candied
orange). Smooth and rounded in the mouth with perfect balance.
Serving Suggestions
Serve at IO*C as an aperitif, with foie gras or Roquefort cheese canapes. Also
ideal served with white meats in sauces or with strong-fasting cheeses (Munster,
Maroilles). |
